Stylish in the Kitchen!

Style definitely has it’s place in the kitchen! Nothing says Love more than a home cooked meal! I happen to think cooking for your family is very stylish!

Cooking is also a great way to get the kids involved. I find if Stella helps me cook our meals, she cleans her plate….which makes me a very happy momma! Cooking with the family is also a great teaching opportunity! They can learn how important food is to our bodies and even grow to love those veggies, fruits, and proteins…..not to mention, it keeps them busy, stimulated and out of trouble.

Please do not judge my messy kitchen….not my most stylish moment! 🙂

Okay! I am going to share one of my family’s favorite meals. So put on your most STYLISH APRON and let’s get to cookin’!

Shrimp and Corn Chowder….YUMMO!

Ingredients:

2 -3 Ears of Fresh Corn

1 tablespoon olive oil

1 medium onion, chopped

(1/2 cup) 1 medium bell pepper, chopped

(1 cup) 1 stalk celery, chopped

(1/3 cup) 2 garlic cloves, finely chopped

1 cup reduced-sodium chicken broth

3 large potatoes, peeled, cut into 1/2-inch cubes

1/4 teaspoon dried thyme leaves

1/8 teaspoon ground red pepper (cayenne)

2 tablespoons all-purpose flour

2 cups whole or nonfat milk

12 ounces shrimp, cooked peeled and deveined tails removed

**Feel free to add to or take from the ingredients. Maybe you would like more potatoes and shrimp….I say do it!

Directions:

1. Boil your ears of corn until kernels are soft and easy to remove from the cob

2. In a saucepan, heat oil and 1tbsp of butter over medium heat. Saute onion, bell pepper, celery, garlic, and potatoes in oil and butter, stirring frequently, until tender. Add broth, thyme and cayenne. Heat to boiling. Reduce heat; cover and simmer 10 minutes.

3. Add corn to the mixture in saucepan (Don’t forget to remove the corn from the cob). Heat to boiling, stirring frequently. Using wire whisk, stir flour into milk until smooth; stir into mixture in saucepan. Heat to boiling. Reduce heat; simmer uncovered about 5 minutes or until vegetables are tender and soup is thickened. Stir in shrimp; cook 1 to 2 minutes or until hot. Then serve it up!

Almost forgot the best part….BACON!!! Fry your bacon until crispy and then add as garnish!


I love this chowder! It’s hardy, yummy, and the shrimp make it a great summer chowder! I hope you and your family enjoy one of our favorite meals!
