Breakfast for Dinner….Why, Yes Please!

Breakfast for Dinner is very Stylish!

Who doesn’t love breakfast food….especially when it’s for dinner?  In my home, breakfast for dinner is a great treat! One of our family favorites is pancakes! While I love them, the mommy and wife in me recognizes they are not filled with nutrition. So, I came up with my own pancake recipe and added some healthy ingredients. I should note that I very rarely follow a recipe. My momma taught me to “add a little bit of this and a little bit of that!” Feel free to do the same! 🙂

Cinnamon and Oatmeal Pancakes!

Ingredients you will need:

3/4 cup milk

2 tablespoons white vinegar

1 cup all-purpose flour

2 tablespoons white sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon sugar

2 tablespoons cinnamon

2 cups old fashioned oats

1 egg

2 tablespoons butter, melted

cooking spray

**You can use a store bought pancake batter if you would like and add cinnamon and oats

Directions

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
  2. Combine flour, sugar, oats, cinnamon, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

 

Presenting a meal can be done in a very stylish way…..after all, presentation is everything! If you are feeling fancy, prepare those pancakes in fun shapes! For this meal, I made my pancakes in the shape of a heart! Garnish with a strawberry, honey, confectioners sugar and serve! Who doesn’t love fancy pancakes??
